This really easy Oat, Apricot and Brazil nut raw protein bar is much healthier than many shop-bought versions. It is rich in thyroid-supporting minerals and great as a breakfast option when you are short of time and need something to balance your blood sugar levels.
Ingredients (makes 12)

Method
1. Place the nuts and oats in a food processor and process until fine.
2. Add the rest of the ingredients and pulse until the mixture comes together to form a firm dough (this may take a few minutes).
3. Press the mixture in a 20cm square pan lined with baking paper and freeze for at least one hour. When frozen, cut into 12 bars.
4. Store in the fridge or freezer until needed (will last 1 month in the freezer).
Great as a healthy breakfast option or snack.
